Guatemala, Monte Grande: Tangy and even a little sour, this Guatemalan cacao is high in acidity which to some may translate into a faint fermented / vinigar aroma.


Belize, Maya Mountain: Less tangy than Guatemalan caco, Maya Mountain cacao is bright and delicate in flavor with hints of fruit notes.


Madascar: Buttery with notes of pineapple.


Haiti, PISA: Mild with notes of cocoa powder, nuts and a bit of honey.
